My partner recently bought a spiralizer for his mum, and I really wanted to give it a go and make some veggie spaghetti/noodles. I have been obsessed with the idea of a paleo diet and eating healthier, and this is so easy to make that I encourage you all to give it a go!

This meal that we cooked is essentially spaghetti and meatballs, but there's no pasta in sight! Instead we used carrot and cucumber and put them through a spiralizer to make our pasta/noodles.
If you don't have a spiralizer you can use a Julienne peeler, or pick one up for cheap!
You can also use any veg that is quite solid for this recipe idea. Courgette, zucchini, sweet potato, the list can go on and on. I thought carrot and cucumber would go well with tomato though so I stuck with something safe and that I knew I liked.

This was so quick to make also as all we did was put our veg through a spiralizer and dish it up, and then we browned off our meatballs in some coconut oil (for extra healthy-ness), poured on a can of finely chopped tomatoes and let it stew and simmer for a little while, added in a small amount of seasoning and herbs and et voila!
We dished it up onto our 'spaghetti' and yums all around!
