I also love my food and my sweet treats. Because who doesn't?! and The Hummingbird Bakery is a brand name I know of and have heard of before
They have a new sweet treats recipe book out named "Life is Sweet" which delves into American style home baking. All of this is a win for me. There are recipes for buttermilk pancakes, sweet potato pie, and A LOT OF RECIPES INCLUDE PEANUT BUTTER!!
To get to grips with this recipe book, I decided to start off with a very easy recipe and bake some of their "Peanut Butter & Marshmallow Cookies"
I don't want to ruin the cookbook for you, so I am only going to give you a sneak peek into this one recipe as it is SO simple. There are so many amazing sounding recipes though. I want to bake the "Peanut Butter and Jelly Layer Cake" soon as well as this decadent looking chocolate bundt cake. They also tell you how to make the best buttermilk pancakes, a true American staple! That in my opinion, should be a staple to the English breakfast life too
There are savoury recipes as well as sweet so it will benefit you regardless of what kind of tooth you have, and recipes range from easy as pie (heehee) to a little bit more advanced
For "Peanut Butter and Marshmallow cookies" you will need:
softened & unsalted butter, caster sugar, soft light brown sugar, 1 large egg, peanut butter of course! (it can be smooth or crunchy. I used smooth, but might re-bake with crunchy), plain flour, 3/4 tsp bicarbonate of soda, 1/4 tsp salt, 1/4 tsp baking powder, mini marshmallows (or larger ones cut up. I used pink and white mini marshmallows)
This recipe makes approximately 24 cookies!
First step is to cream the softened butter, the caster sugar, and brown sugar together. I had to do it with a hand whisk as I didn't have an electric whisk available to me and it hurt so bad. If you have an electric whisk, please do use one! Once the mixture is light and fluffy, add in the egg and the peanut butter and whisk that together also
Once all of those ingredients are combined you can sift in the flour, bicarbonate of soda, salt, and baking powder and then mix all of these until well combined. Remember to scrape the sides of your bowl to make sure everything is combined
When combined, fold in the mini marshmallows. That is your cookie dough all ready! I ate some of mine raw haha I just couldn't wait to try it out
With your hands pick up some of the mixture and roll it into small balls and place these dough balls on to a baking tray, preferably lined with baking paper. I had to use tin foil as I had no baking paper available to me. This wasn't the best method as some of the cookies did get stuck to the foil when I was trying to remove them from it
Bake for 11-15 minutes and then take them out of the oven. Leave them to cool and then you can enjoy these decadently gooey cookies. See, it's all so easy! However, if you want the measurements of the ingredients you'll have to get the recipe book ;) I can't give it all away
Just looking at these pictures I have taken is making me hungry and is giving me cravings for some more of them. Even a few days after baking these cookies still remained soft, but crunchy on the edges. For me, that is the perfect cookie and I am so happy I know how to bake cookies like that now
I can't wait to start baking some cakes and trying out some of the other recipes. The book is super easy to understand, even my boyfriend who doesn't know a whisk from a spoon helped me out and was able to understand what I needed him to do for me. He's excited to start baking some more with me which will be a cute thing for us to do together
